This post has two purposes today.

First, it’s asparagus season here in New Jersey and I want to share with you this delicious Asparagus and Ham Quiche recipe. My family loves this simple spring asparagus recipe. Truthfully, this quiche is perfect for breakfast, lunch or dinner.

Second, I have an over-abundance of cookbooks on my bookshelf. No, I seriously have an overabundance of cookbooks. Like, I have so many cookbooks that I could probably open up my on reference section in the library. So, I thought it would be fun to start a new series here on The Farm Girl Gabs called Cookbook Re-Creations. Each month, I will highlight one of the recipes from my cookbook stash and share it with you. How does that sound? I love trying new recipes and this is a perfect way to start.

So, now onto the Asparagus and Ham Quiche. Quiches are one of my favorite dishes. I like to think of it as a savory pie in which you can pretty much add any ingredients you like to.

I always use the quiche recipe from the Joy of Cooking by Irma S. Rombauer. This cookbook is packed full of great recipes for everything from appetizers to desserts. It is really a great basic cookbook to have on your shelf.

Here in New Jersey, asparagus in one of the first vegetables of spring. I get so excited when Jersey Asparagus comes into season. That means that the wonderful Jersey Fresh Produce we grow here on our farm is right around the corner. Asparagus is one of those vegetables that my hubby just loves. I try to make it as much as possible when it is in season here in New Jersey, but I get tired of the same old way to prepare it. So, I decided to make Anthony an Asparagus and Ham Quiche. It was a hit!

Quiches are so easy to make. After I chop all of my vegetables and ham, I simply layer the cheeses on the bottom and top then with the asparagus, ham, and onion. I then mix together the eggs and cream in a mixing bowl.

Gently pour the egg mixture over the quiche and that is it! This took all of 15 minutes to prepare. You can either make your own pie shell or cheat a little and use a store-bought pie shell. No one will know the difference.

Asparagus & Ham Quiche is the perfect breakfast, brunch, lunch or dinner option. This easy, yet versatile quiche is perfect for any occasion.

Ingredients
  • 1 – 10 inch pie crust unbaked
  • 3/4 cup chopped asparagus
  • 1/2 cup ham chopped
  • 1/2 cup onion finely diced
  • 1 cup swiss cheese
  • 1 cup cheddar cheese
  • 4 eggs beaten
  • 1 1/2 cup light cream
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • Pinch of nutmeg
Instructions
  1. Pre-heat oven to 375 degrees.
  2. Chop vegetables and set aside.
  3. Layer the bottom of a 10-inch unbaked pie shell with cheeses.
  4. Top cheese layer with asparagus, ham and onions.
  5. In mixing bowl, beat eggs and light cream together. Season with salt, pepper and nutmeg.
  6. Gradually pour over pie shell.
  7. Bake at 375 degrees for 35-40 minutes of until top is golden brown and firm.

  1. Before we moved back to Chicago I had planted some asparagus about 5 years ago. it was just starting to come up in nice thick stalks, with enough for my family of 6 to enjoy a couple meals. I’m so sad to have to start over….knowing it will be years until that fresh asparagus is on my plate. Until then, I’ll be at the farmer’s market all summer, just so I can have some to make this gorgeous quiche!!

    1. You can buy individual ham slices at your local grocery store. They are relatively inexpensive and you don’t have to buy the whole entire ham.
