We like to call my son the “king” of pizza around here. Yep, this growing 14-year-old can easily sit down and eat a whole pie in one sitting. No joke, I’ve seen him do it. Pizza is by far his favorite meal. Pizza night is always one of my favorite nights of the week. But when life gets in the way, or I am going in a million different directions, I don’t always have time to make homemade pizza or even order from our favorite pizza place. Freshetta 4-Cheese is a delicious time saver. I always make sure I have a box or two stored in my freezer for quick weeknight meals. Now that the warm summer weather has arrived, it’s time to change-up my dinner options. This means making more salads to keep the kitchen cool. Let’s face it, salads are pretty easy to make. This Roma Salad is one of my favorites. I recreated it from a local restaurant that we frequent quite often. It has an Italian flair which pairs perfectly with a slice of Freshetta.

I love the combination of roasted red peppers, sharp provolone, and red onions. When served on a bed of spring mix and drizzled with a simple balsamic dressing, this Roma Salad is so good. The sweet peppers and red onions balance the sharp flavors of the provolone. I often add grilled chicken to this salad too for an extra shot of protein.

You can find Freshetta in the freezer section at Walmart. They have so many varieties to choose from. Decisions…decisions. When I am there, I make sure I stock up for those nights when a quick meal is needed.

Ingredients
  • 2-3 cups Spring Mix
  • 2-3 slices sharp provolone
  • 1 roasted red pepper sliced
  • 1/4 cup sliced red onion
  • 4 tablespoons balsamic vinegar
  • 1/2 cup olive oil
  • 1 garlic clove minced
  • Salt & Pepper to taste
Instructions
  1. To make dressing, combine the vinegar and garlic in a small bowl. Add the oil in a slow steady stream, whisking constantly. Season with salt and pepper to taste.
  2. To assemble salad. Add a layer of spring mix to a bowl or large dish. Top with cheese, onions and peppers. Drizzle with balsamic dressing.
