Three cheers for the red, white and blue! I love anything red, white and blue. Call me patriotic or call me crazy, but those three colors really speak to me. I guess that is why I like Independence Day so much. The Fourth of July also happens to be two days before Gabrielle’s birthday so we make it an extra long celebration in our house. She is turning 17 this year and will start driving. Sigh….
No Fourth of July holiday is complete without a patriotic dessert of some sort. Lucky for me, we started to pick blueberries last week on the farm and are still picking strawberries too. Can you say HAPPINESS??!! Since we are so close to our Independence Day celebration, I just had to whip up this Star-Spangled Brownie Pizza. It is such a fun and patriotic dessert.
It’s pretty darn easy to make….and tasty too!
To begin, I prepared a box of my favorite brownie mix according to the directions. I cut a sheet of parchment paper in a circle to fit my pizza stone. Spread the brownie batter out and bake in the oven. Do not to forget the parchment paper or you will have one big runny mess in your oven.
Once the brownie is cooled, I spread a simple cream cheese frosting over top, just like I would pizza sauce. Cream cheese frosting is my favorite kind of frosting. I could just sit there and eat the whole bowl. This version is not real sweet so it balances well with the sweet blueberries and strawberries.
Now, add your blueberries and strawberries in any pattern that you like. You can get pretty creative with your pattern. Sprinkle some white chocolate chips over top and you are all set. I love utilizing the Jersey Fresh produce we grow on our farm to create simple and delicious recipes.
- 1 package brownie mix, prepared according to package directions
- 1 cup Jersey Fresh Blueberries
- 1 cup Jersey Fresh Strawberries, sliced
- ¾ cup white chocolate chips
- 8 ounces cream cheese, softened
- ¼ cup butter, softened
- 1¾ cup heavy cream
- 1 teaspoon vanilla extract
- Preheat oven to 375 degrees.
- Cut a piece of parchment in the shape of a circle to match the size of a large round pizza stone. Place on stone.
- Spread brownie batter over over parchment toward the end of the stone.
- Bake for 16-18 minutes until center is set. Remove from oven and cool completely.
- To Make Icing combine cream cheese, butter, powdered sugar, vanilla and heavy cream in a bowl. Beat with a mixer until light and creamy.
- Spread over cooled brownie crust, just like you would pizza sauce.
- Arrange sliced strawberries, blueberries and white chocolate chips over top of icing.
