Thanksgiving Day is quickly approaching and that means one thing. Well, actually, it means two things. We will be eating a whole lot that day, and a whole lot of leftovers will be staring us in the face afterwards. But that is what Thanksgiving is about after all, family and plenty of food. I am always searching for ways to utilize the extra turkey leftover from Thanksgiving. Well, leftover turkey will never be the same with this tasty Turkey Bacon Pesto Panini. This quick sandwich is perfect for a weeknight dinner along with a side of Birds Eye Flavorful Ranch Broccoli.

To make this panini, I layered some turkey, bacon, provolone cheese and tomato on a slice of ciabatta bread. You can also use a ciabatta roll. I spread some homemade pesto spread on the bread. After you place it on top, brush each side with some olive oil.
Place the sandwich on a panini press and ….press (or close the lid). If you don’t have a panini press, that’s OK. Place the sandwich in a large skillet and then press the sandwich down with another skillet on top.
Grill the panini until the bread is golden brown and the cheese is melted. The bread will get nice and crunchy, the cheese will be melted and the turkey and bacon will taste delicious. This hearty sandwich won’t taste like leftovers at all!
- 4 slices of ciabatta bread, or 2 ciabatta rolls
- 4 thick slices of turkey
- 4 slices of cooked bacon
- 4 slices of provolone cheese
- 4 slices of tomato
- ½ cup mayonnaise
- ¼ prepared pesto
- Salt and pepper to taste
- Olive oil, for brushing
- Heat up panini grill to medium-high heat.
- Mix mayonnaise and prepared pesto together.
- Start building the panini but adding the pesto spread to one side of the bread. Add the turkey, cheese, bacon and tomato.
- Season with salt and pepper.
- Top with remaining cheese and slice of bread.
- Place on panini press and cook until golden brown. Cheese should be nice and melted.
