School is officially underway in our neck of the woods and that means one thing…..the weeknight craziness has begun. A high school senior, an eight grader and a very busy family farm keep us running….constantly! It’s these busy days that I turn to quick meals to feed the family. I have recently joined the “Meatless Monday“ bandwagon. Today I am sharing a tasty meatless meal option – Crispy Tender Wraps With Corn & Avocado Salsa. So how do you handle busy weeknights? For us, I like to have nutritious grab and go options available for my family. Sandwich wraps are always a family favorite. They are not only quick to make but versatile too. There are so many different flavor combinations to choose from. Crispy Tender Wraps With Corn & Avocado Salsa are delicious and the perfect answer for a meatless meal. I used Gardein Seven Grain Crispy Tenders and added a delicious Corn & Avocado salsa, made with the fresh corn from our farm.
Salsas are a quick and easy condiment that adds an extra dash of flavor to dishes. For the Corn & Avocado Salsa, I used fresh corn we grow on our farm, avocado, tomatoes, jalapeños, red pepper and onions. I mixed all the ingredients together and seasoned with fresh lime juice, cilantro, salt and pepper. This salsa is perfect for meat, fish or poultry too.
To assemble the wraps, I simply added a layer of lettuce, the baked Gardein Seven Grain Crispy Tenders and then topped with the spicy Corn & Avocado Salsa.
Fold the sides in, roll and cut diagonally in the center. The Corn & Avocado salsa gives these wraps the perfect amount of kick. We like things spicy in our house but you can certainly cut back on the amount of jalapeño peppers if necessary.

- 2 packages Gardein Seven Grain Crispy Tenders
- 6 Sun-Dried Tomato Wraps Burrito Size
- Lettuce
- 1 1/2 cup fresh corn cut off cob
- 2 Avocados diced
- 1 small tomato finely diced
- 1/4 cup red onion diced
- 1 clove garlic minced
- 1 jalapeño finely diced
- 1/4 cup sweet red pepper diced
- Juice of one lime
- 2 tablespoons olive oil
- 3 tablespoons fresh cilantro
- Sale & Pepper to taste
- Bake Gardein Seven Grain Crispy Tenders according to package instructions.
- Cut corn off cob and add to a medium bowl.
- Add diced avocado, peppers, tomato, garlic and onion to the corn.
- Mix to incorporate.
- Add the juice of one lime, salt, pepper and fresh cilantro.
- To assemble wraps, add a layer of lettuce to the top of the tortilla. Add 3 pieces of chicken and then top with the Corn & Avocado Salsa.
- Fold in sides and roll to close. Cut diagonally down the center.
Meatless Monday was a hit! These wraps were satisfying and delicious. It’s good to know that quick meals can be healthy too. Small steps count and Meatless Mondays are a great way to start. In fact, if every American ate meatless just 1 day/ week all year it would be the equivalent of taking ½ million cars off the road. Gardein products are better for your body and better for the planet.
