Did you ever have a craving for dessert but didn’t have the time to go through the whole baking process to whip something up? Here’s a quick and easy weeknight dessert that’s perfect to make in a pinch — Vanilla Ice Cream with Grilled Peaches. Simplicity at its best.
Peach season at our farm is definitely one of the highlights of summer. In my opinion, there is nothing like a fresh picked juicy Jersey peach. Here at our farm, we grow 20 acres of peaches. That’s a lot of peaches and I am so lucky to be able to walk out my back door to pick one (or two) to eat.
I enjoy peaches any which way, but did you every try grilling a peach? The slightly grilled flavor combined with the delicious carmelization from the juices adds a whole different flavor dimension. Vanilla ice cream is my favorite – I know, I’m a plain Jane. But, once you top the cold vanilla ice cream with the warm grilled carmelized peaches…oh my, it’s heaven in a bowl! Not a fan of ice cream? This works perfect with frozen yogurt too.
Here how to make this simple recipe.
- 2 large peaches - on the firmer side
- 3 tablesoons canola oil
- 1/2 cup brown sugar
- Vanilla ice cream
- Preheat grill to medium high heat (400 degrees)
- Slice peaches and coat each side with oil. Then dredge each slice in brown sugar.
- Place on heated grill.
- Grill 3-4 minutes each side. Remove from heat.
- Scoop 2 scoops of vanilla ice cream into 4 bowls. Top each bowl with grilled peaches.
I first start with 2 large semi-firm peaches. I myself, am a soft, juicy peach type of gal. This means, I like them to be soft when I eat them with the juices running down my arm. For this recipe, however, a firmer peach is better.
I slice each peach and spread out on a dish. The, I brush each side with canola oil to prevent them from sticking to grill burners.
Dredge each side in brown sugar. This allows for extra carmelization of the peach slices.
Now, you’re ready to take everything outside to the grill. Place slices on grill. Grill should be at medium-high heat.
Cook 3-4 minutes on each side until the peaches have these beautiful grill marks.
Remove from heat. In a bowl, add two scoops of vanilla ice cream and top with 4-5 peach slices. That’s it! This simple weeknight dessert adds a whole new flavor dimension to a summer fruit. It’s amazing how ta few simple ingredients can make such a delicious dessert.
