Ingredients

  • 8 ounces Hatfield Recipe Essentials Sweet Italian Ground Sausage
  • 6 large eggs
  • ½ cup half and half
  • 1 cup crumbled feta cheese
  • 1 ½ cups baby spinach
  • Salt & Pepper to taste
  • Dash hot sauce

Instructions

  1. Preheat oven to 400 degrees
  2. Heat a large skillet over medium heat. Add 8 ounces of sweet Italian sausage. Use a spatula to crumble. Cook through and drain grease. Return to pan.
  3. While sausage is cooking, whisk eggs and half and half in a medium mixing bowl. Add salt and pepper to taste
  4. Pour eggs over cooked sausage on medium heat. Add ½ cup of feta and 1 cup of spinach. Cook until edges are set - about 3 minutes.
  5. Remove pan from heat. Top with reserved cheese and spinach.
  6. Place pan in preheated oven. Bake 15 minutes until center is firm.
