Ingredients

  • 6 slices bacon chopped
  • 6 large russet potatoes
  • 6 tablespoons butter
  • 1/2 cup flour
  • 3 cups milk
  • 3 cups chicken stock
  • 1 small onion finely diced
  • 2 cup shredded cheddar cheese
  • 3/4 cup sour cream
  • 2 scallions finely chopped (for garnish)
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Heat a large stock pot or dutch oven over medium heat. Add bacon and cook until crispy. Remove bacon and set aside. Reserve some bacon for garnishing. Drain grease drippings. 
  2. Add butter to the pot and melt over medium heat. Add onions and cook until transparent.
  3. Add flour to the pot, stirring constantly, about 1-minute. Whisk in chicken broth. Cook, stirring constantly about 4 minutes. Add milk.
  4. Add potatoes, bacon and one cup of cheese and stir well. Cook over medium until soup comes to a boil. 
  5. Once soup comes to a boil, lower and cook about 45 minutes until potatoes are tender.
  6. Garnish with sour cream and remaining cheese, scallions, and bacon.
