Effortless meals are my best friend. You know, the kind that take little or no preparation at all. This week is blazing hot here in New Jersey and the last thing I want to do is turn on my oven and heat the house up. You know what I am talking about, right?
Effortless meals are “Da-Bomb” during the summer months! These Mexican Lettuce Wraps are the perfect no-fuss effortless meal. A rotisserie chicken is my favorite ingredient to utilize in an effortless meal. It’s already cooked so no worries about turning on the oven and it can be used in everything from salads, to wraps to a nice roasted chicken dinner. Three cheers for versatility!
Since summer is in full swing, I don’t have time to prepare a fancy dinner. Life is busy on our farm and we all work a lot. Plus, I would much rather spend what free time I have with my family outside and not inside in the kitchen.
In order to make this recipe, I headed to my local Super Walmart and picked up one of their fresh cooked Marketside Rotisserie Chickens. It is located in the Effortless Meals display in the deli case or in the front of the store on a mobile display. There are a lot of Walmart Effortless Meal options available, ranging from pizzas to sandwiches.
Just look for the Effortless Meal signs around the deli section. While I was at Walmart, I picked up the other ingredients I needed for these Mexican Lettuce Wraps like lettuce, salsa and cheese. I also grabbed a 2-liter bottle of Sprite® to enjoy with these wraps as well.
Are you ready for the simplest dinner ever! Here is how I put these tasty wraps together.
I begin by chopping up the tomatoes, onions, and avocado. I then removed all the meat from the rotisserie chicken. Place chicken in a medium bowl and mix in one cup of salsa. For this recipe, the chicken can be either HOT or COLD. It’s your choice.
I washed a head of iceberg lettuce and cut in half. I gently pulled the leaves apart so they remain whole. Now, I simply filled the leaves with some rice (left over from dinner the night before) and the chicken mixture.
Top with your favorite ingredients like tomatoes, onions, avocado, cheese and sour cream. Dinner in a snap. I love it!
These are basically a low-carb version of a chicken taco. If you want to make this no-carb, then just leave out the rice. So versatile. Totally effortless but totally delicious! I like to pair my Mexican Lettuce Wraps with a nice cold glass of Sprite®.
- 1 Marketside rotisserie chicken meat removed
- 1 cup medium salsa
- 1 head of iceberg or Boston lettuce
- 1 small red onion diced
- 1 large tomato diced
- 1 avocado diced
- 1 cup cheddar cheese shredded
- 1/3 cup fresh cilantro chopped
- Sour Cream for garnish
- 2 cups rice cooked (optional)
- Remove meat from chicken and place in medium bowl.
- Add one cup of salsa to chicken and mix.
- Wash on head of lettuce and cut down the center. Gently remove leaves so the remain whole.
- Begin filling leaves by adding 1/4 cup of rice, chicken and then topping to tomatoes, onion, avocado, cheese and sour cream.
- **For a no-carb option, omit the rice
- **This can be prepared with the chicken either hot or cold.
