From the time each of my children celebrated each of their first Christmas’, I felt the importance of carrying on certain family traditions with them and starting our own as well as a new family. One of those new family traditions that my husband and I started many moons ago was to purchase each of our children a Hallmark ornament for the Christmas Tree. They are now 17 and 13 and I still make sure they have a special ornament waiting for them each Christmas morning.

Hallmark Ornaments

For many years, Hallmark has been a cornerstone for greeting cards and Christmas Ornaments. With all the ornaments I have purchased for them over the years, I plan to eventually box them up and send them along with them when they start lives of their own. This way, they will have a beautiful start to their own Christmas tree. They can also enjoy the beauty of each ornament and think of the many fond memories of Christmas’ past.

Walmart Hallmark

Walmart has a wonderful selection of Hallmark Ornaments and Christmas greeting cards. Ornament selections include 16 Walmart exclusives, resin figurines, Holiday Barbie, new deco figurines and more. What a wonderful way to spread (or send) holiday cheer, than by giving a Hallmark Ornament to a family member or friend. Hallmark ornaments can be found in the greeting card aisle at your local Walmart. I purchased these two for our tree because they are two things I love – angels and Disney!

Another family tradition that I love is holiday baking. It is something that I always enjoyed with my mom. Now, my daughter partakes in the annual Christmas baking extravaganza with me. These Pumpkin Whoopie Pies, are one of my family’s favorite. While they may not be a traditional Christmas cookie, they are just as delicious to eat, especially while trimming our tree.

These moist pumpkin cookies are filled with a creamy cream cheese filling. I could seriously just sit down and eat the icing in itself. They are really easy to make. Here is how.

These wouldn’t be called Pumpkin Whoopie Pies without a generous amount of pumpkin puree. This is added to the batter right before you mix in the dry ingredients.

I use an ice cream scoop to form each cookie. This also assures that they will be all the same size. After the whoopie pies are done baking, allow them to cool completely.

While the whoopie pies are cooling off, I mix together all the cream cheese filling ingredients, trying very carefully not to eat any as I go. Add a few tablespoons to the flat side of one whoopie pie. Then top with another pie.

Pumpkin Whoopie Pies
These moist and delicious Pumpkin Whoopie Pies have a creamy sweet cream cheese filling.

Ingredients
  • Whoopie Pies
  • 1 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 tablespoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 cup light brown sugar packed
  • 1/2 cup vegetable oil
  • 15 ounces pumpkin puree
  • 1 extra large egg
  • 2 teaspoons vanilla
  • Cream Cheese Filling
  • 8 ounces cream cheese softened
  • 1/2 cup 1 stick butter, softened
  • 2 cups powdered sugar sifted
  • 1 teaspoon clear vanilla extract
  • Powdered sugar for garnish
Instructions
  1. Preheat oven to 350 degrees.
  2. Sift dry ingredients and set aside.
  3. In a mixing bowl, beat oil and eggs until light yellow. Add brown sugar and beat until well incorporated.
  4. Mix in pumpkin puree and vanilla.
  5. Gradually add dry ingredients on low speed. Do not over mix. Beat only until incorporated.
  6. Use an ice cream scoop to drop on a lined sheet pan. You should have 16 "pies" which will make 8 Whoopie Pies once assembled
  7. Bake at 350 degrees for 15 - 18 minutes. Whoopie pies should be soft and spongy to the touch.
  8. Remove from oven and cool completely.

  9. Cream Cheese Filling
  10. In a medium bowl, mix cream cheese and butter until well incorporated. Add vanilla.
  11. Gradually mix in powdered sugar and beat well.
  12. To assemble pies, add a few tablespoons of filling to the flat (or bottom side) of one of the pies. Top with another pie.
  13. Dust with powdered sugar before serving.
