Spiked Spiced Chocolate Crinkles

Spiked spiced Chocolate Crinkles have a hint of spice and a splash of bourbon. The cookie recipe is a perfect holiday treat.

Each Christmas, I love to have an “unexpected” cookie on tap in my baking plan. What is an unexpected cookie you ask? An unexpected cookie is one that looks pretty simple and straightforward, but once you bite into it, POW! It’s a totally different flavor profile than expected. That’s where these Spiked Spiced Chocolate Crinkles come in. It’s what do you get when you combine chocolate, a splash of bourbon and dash of cayenne pepper. The flavors in these boozy cookies meld together to create that “unexpected” yet delicious surprise for your holiday guests.

These cookies freeze well too. I like to make a big batch and store them in the freezer. Have unexpected company drop in? No problem, just pull some out to serve. Spiked Spiced Chocolate Crinkles, might be a mouthful to pronounce, but boy are they good!

Ingredients
  • 1 cup unsweetened cocoa powder
  • 2 cups white sugar
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 teaspoons pure vanilla extract
  • 5 tablespoons bourbon
  • 2 1/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Several Dashes of cayenne pepper
  • 1/2 cup confectioners' sugar
Instructions
  1. Mix together cocoa, sugar, and vegetable oil in medium bowl.
  2. Beat in eggs one at a time and incorporate well after each.
  3. Add bourbon and vanilla and mix to incorporate.
  4. Combine the flour, baking powder, salt and cayenne pepper.
  5. Gradually add to the chocolate mixture.
  6. Cover dough and chill for at least four hours.
  7. When dough is chilled, preheat oven to 350 degrees.
  8. Line cookie sheets with parchment.
  9. Roll dough into one inch balls. I use a small cookie scoop.
  10. Roll each ball with confectioners sugar before placing on cookie sheet.
  11. Bake for 10 - 12 minutes.
  12. Remove from oven and cool for a minute and then transfer to a wire rack to cool.
