Corn Zucchini Fritters

These Corn and Zucchini Fritters are light and crispy with just the right amount of cornmeal crunch. Perfect for the wonderful summer corn and zucchini now in season.

Ingredients

- cornmeal - flour - baking powder - corn - zucchini - cheddar cheese  - cayenne pepper - onion powder

Step 1

Place vegetable oil in a cast iron skillet and heat to 365 – 375 degrees.

Step 2

Clean corn off the cob. Shred zucchini.

Step 3

Combine the dry ingredients in a large bowl and mix.

Step 4

Beat the egg and milk together, then pour into the dry ingredients.
