Bruschetta

Bruschetta is a classic Italian appetizer that is easy to make at home. Toasted bread is topped with tomatoes, Parmesan cheese, garlic, and fresh basil.

Ingredients

  • 4 Tomatoes, finely diced
  • 1/3 cup Olive Oil
  • 2 Cloves Garlic, minced
  • 2 Tablespoons Balsamic Vinegar
  • Salt and Pepper, to preference
  • 1/4 cup Basil Leaves, cut into strips
  • 1 Baguette
  • Parmesan, as desired

Instructions

    1. In a skillet over medium heat, heat 2 Tablespoons of olive oil. Once hot, add the minced garlic and cook for 2 minutes.
    2. Remove from heat and allow to cool as you prepared the tomatoes.
    3. Finely dice tomatoes and place them in a medium-sized bowl.
    4. Pour the garlic-infused olive oil into the bowl, along with the balsamic vinegar, salt, pepper, and basil.
    5. Stir to combine and set aside to marinate for 30 minutes.
    6. Preheat the oven to 400F.
    7. Slice the baguette into 1.5" slices. Brush both sides of each slice with olive oil and place on an ungreased baking sheet.
    8. Bake for 5 minutes, then flip and bake for another 5 minutes until golden.
    9. Top the baguette slices with the tomato mixture and then garnish with Parmesan cheese, as desired.
