Blueberries and peaches collide to make this delicious classic Blueberry Peach Cobbler. This cobbler recipe is a perfect way to enjoy their summer bounty!

Ingredients

  • 6 Ripe Jersey Fresh Peaches
  • 1 1/2 cups Jersey Fresh Blueberries
  • 1/2 cup sugar
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/4 teaspooon salt
  • 1/2 stick butter softened
  • 1/3 cup sugar
  • 1 large egg
  • 1/4 cup buttermilk

Instructions

  1. Preheat oven to 350 degrees.
  2. Peel and slice peaches then add to a medium size bowl. You can leave the skin on if you like. Add blueberries. 
  3. Add 1/2 cup sugar and mix together. Set aside.
  4. In another medium bowl, combine flour, sugar, salt and baking soda. Set aside.
  5. Beat together butter and 1/3 cup sugar in a bowl until fluffy. Mix in the egg and beat until combined.
  6. Slowly mix in 1/2 of the dry ingredients with 1/2 of the buttermilk. Repeat until you have a cake-like batter.
  7. Drop by tablespoons over the blueberry and peach cobbler filling.
  8. Bake 45 minutes until golden.
