Preheat oven to 375 degrees.

Peel, core and finely dice three apples. Add to a medium bowl.

Add sugars, flour, cornstarch, cinnamon, salt, apple juice and lemon juice to bowl. Mix to incorporate.

Unroll one pie crust. Use a large biscuit cutter or rim of a glass to make eight circles.

Fill each circle with one heaping teaspoon of apple filling.

Brush circle with egg wash. Fold over and press together with fork. Transfer to a parchment lined baking sheet.

Pierce a whole in the top of each hand pie with a fork. Brush with remaining egg wash.

Bake 20 minutes or until golden.

Allow to cool.

While hand pies are cooling, prepare glaze.

Dip each hand pie in the glaze and set on a baking rack to dry.
