Mexican Zucchini Boats

Mexican Zucchini Boats are a delicious low carbohydrate, high protein meal will leave you feeling satisfied! It's the perfect way to use up those bushels of zucchini from your garden!

Ingredients

  • 3 medium zucchini
  • 1/2 lb. ground beef
  • 1/2 cup finely diced red peppers
  • 1/2 cup finely diced red onion
  • 1 jalapeno finely diced
  • 1 cup salsa
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Garlic Powder to taste
  • Salt & Pepper to taste
  • 1 cup brown rice cooked
  • 2 cups cheddar cheese
  • 3 tablespoons canola oil
  • Non-stick cooking spray

Instructions

  1. Pre-heat oven to 400 degrees.
  2. Cut zucchini in half lengthwise and scoop out center.
  3. Spray an oblong baking dish with non-stick cooking spray. Line up zucchini and season with salt, pepper and garlic powder. Set aside.
  4. Heat a 12" saute pan on medium high. Add canola oil to the pan. Add ground beef. Break apart and stir often. Add seasonings, peppers, onion, garlic and salsa. Continue to cook until meat is cooked through.
  5. Remove from heat. Add rice and 1/2 cup of cheese and mix.
  6. Fill the center of each zucchini boat with ground meat mixture. Top with remaining cheddar cheese.
  7. Bake for 25 - 30 minutes until golden brown and cheese is melted.
