  • 1 loaf of whole wheat bread of challah bread sliced and cubed
  • 2 cup fresh strawberries sliced
  • 2 cups egg substitute or 8 large eggs
  • 1/2 cup Simply Pure
  • 1 cup almond milk
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 tablespoon pure vanilla extract


  1. Spray a 13 x 9 baking dish with non-stick cooking spray.
  2. Layer bread cubes with the sliced strawberries.
  3. In a mixing bowl, whisk egg substitute, almond milk, Simply Pure, sugar, cinnamon, salt and vanilla together.
  4. Pour over bread and strawberries. Cover and refrigerate for 4 hours or overnight.
  5. When ready to bake, preheat oven to 350 degrees. Cover and bake for 45 minutes. After 25 minutes, remove foil so top gets slightly crispy.
