Vegetable Fried Rice

This recipe for Vegetable Fried Rice is so simple.

Ingredients

  • 3 cups cooked rice white or brown
  • 1 tablespoon canola oil
  • 1 cup frozen peas and carrots
  • 1 clove minced garlic
  • 1/2 cup diced onion
  • 2 eggs beaten
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons sesame oil
  • 2 tablespoons scallions finely chopped

Instructions

  1. In a heated wok or skillet, add canola oil.
  2. Add onion, garlic and peas and carrots. Saute until onion is transparent over medium heat. About 5 minutes.
  3. Add rice and cook for an additional 2 minutes.
  4. Make a well in the center of the rice and add the eggs. Stir constantly until eggs are thorough scrambled and in small pieces.
  5. Add soy sauce and sesame oil. Stir to incorporate. Cook over medium heat five minutes more.
  6. Garnish with chopped scallions before serving.
