Marketside rotisserie chicken
meat removed

medium salsa

head of iceberg or Boston lettuce

small red onion
diced

large tomato
diced

avocado
diced

cheddar cheese
shredded

cup
fresh cilantro
chopped

Sour Cream for garnish

rice
cooked (optional)

Remove meat from chicken and place in medium bowl.

Add one cup of salsa to chicken and mix.

Wash on head of lettuce and cut down the center. Gently remove leaves so the remain whole.

Begin filling leaves by adding 1/4 cup of rice, chicken and then topping to tomatoes, onion, avocado, cheese and sour cream.

**For a no-carb option, omit the rice
