To make cookies:

Cream butter and sugar in a bowl. Add eggs one at a time, beating well after each.

Gradually beat in ricotta and vanilla.

In separate bowl, sift flour, salt and baking soda. Gradually add to creamed mixture.

Drop by rounded teaspoonfuls (or use a small cookie scoop) 2 inches apart.

Bake at 350 degrees for 12-14 minutes or until lightly brown.

Remove from baking sheet and place on wire rack to cool.

To Make Icing:

Beat butter in mixing bowl.

Gradually add powdered sugar, caramel topping, vanilla and sea salt.

Add 1-2 tablespoons of milk until icing is spreadable but not too thin.
