Easy Peasy Peach Cobbler

Peach cobbler is a perfect year round dessert. This cobbler has a butter topping that compliments the juicy Jersey peaches. You'll be going back for more.

Ingredients

  • 3/4 cup melted butter
  • 1 1/2 cup flour
  • 1 1/2 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cup milk
  • 5 cups sliced Jersey Peaches about 6 large
  • 1 tablespoon fresh lemon juice

Instructions

  1. Peheat oven to 375 degrees.
  2. Pour melted butter into 13 x 9 inch baking dish.
  3. In medium mixing bowl, combine flour, 3/4 cup sugar, baking powder, salt and mix well. Stir in milk but do not over mix.
  4. Pour this batter over the butter but do not incorporate.
  5. In medium saucepan, combine peaches, 3/4 cup sugar and lemon juice. Bring to a boil over high heat stirring constantly.
  6. Pour peaches over batter but do not mix together.
  7. Bake in preheated oven for 45 minutes or until golden brown.
  8. Serve with vanilla ice cream if desired.
