Blueberry Cream Cheese Coffee Cake

This is a simple coffee cake with fresh blueberries and cream cheese mixed throughout. It has a hint of lemon in the crumb topping. It's delicious.

Ingredients

  • 1/2 cup butter
  • 1 1/4 cup of sugar
  • 2 large eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup milk
  • 1/4 cup water
  • 2 cups fresh Jersey blueberries
  • 8 oz. light cream cheese - cubed
  • Topping
  • 1/2 cup flour
  • 2 tablespoons lemon zest
  • 4 tablespoons butter

Instructions

  1. Preheat oven to 375 degrees.
  2. Beat 1/2 cup butter until light in color. Gradually add 1 1/4 cup of sugar and beat until light and fluffy.
  3. Add eggs, one at a time. Beat well after each.
  4. In medium bowl, combine 2 cups of flour, baking powder and salt. Mix well.
  5. Combine milk and water.
  6. At low speed, gradually add flour mixture alternately with milk/water mixture. Begin and end with dry ingredients. Mix only until blended. Do not overbeat.
  7. Turn off mixer. Add cubed cream cheese and blueberries. Using a spatula, mix to incorporate. Spread batter into 9" square pan.
  8. In small bowl, combine crumb topping ingredients. Mix together with a fork until crumbs look like small peas. Spread evenly over batter..
  9. Bake at 375 degrees for 50-55 minutes.
