Wash and cut brussels sprouts in half. Set aside.
Heat a large skillet over medium heat. Add walnuts and toast for 5 minutes stirring occasionally. Remove walnuts from skillet and set aside.
Heat oil in the same skillet over medium-high heat. Add brussels sprouts and season with salt and pepper. Sautee for 5 minutes until brussels sprouts begin to carmelize. Lower heat to medium and add chopped bacon and walnuts. Cook for another 10 minutes.
Add 3/4 cup of blue cheese to the pan. Toss to coat. Remove from the pan to a serving dish. Top with remaining blue cheese.
