Apple Spice Cupcakes

These easy Apple Spice Cupcakes are full of sweet apples and lots of spice. They are the perfect treat you can make any time of the year.

Ingredients

  • 2 1/4 cup all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 stick butter 8 tablespoons, softened
  • 2/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla
  • 2 large apples about 3 cups, peeled and chopped
  • Pillsbury™ Filled Pastry Bag” Filled Pastry Bag Vanilla 16 oz.
  • Dried Apple Slices - for garnish
  • Cinnamon Sugar - for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Line 2 muffin pans with cupcake liners. Set aside
  3. In a medium bowl, sift dry ingredients. Set aside.
  4. Add the butter and sugars to the mixer and beat until fluffy. Add eggs, one at a time, beating well after each. Add vanilla.
  5. Turn mixer to low and gradually beat in sifted dry ingredients. Don't overbeat.
  6. Remove bowl and stir in chopped apples by hand.
  7. Fill muffin cups 2/3 full. Bake 25 minutes or until a toothpick comes out clean.
  8. Cool on a baking rack. 
  9. Use the Pillsbury™ Filled Pastry Bag” Filled Pastry Bag Vanilla 16 oz to pipe icing on the top of the cupcake. Here's how: 1- Push the frosting toward the star tip and twist the top of the pastry bag. 2- If not already removed, remove the plastic over from the star tip by tearing at the perforation. 3- Squeeze from the top of the pastry bag to frost your cupcake. 
  10. Sprinkle cinnamon sugar over top and garnish with a dried apple slice.
