  • 1 lb. Smithfield® Original Pork Loin Filet cut into bite-sized pieces
  • 3 cups cooked brown rice
  • 1 tablespoon canola oil
  • 3/4 cup frozen peas and carrots
  • 3/4 cup frozen corn
  • 2 cloves minced garlic
  • 1/2 cup onion diced
  • 2 eggs beaten
  • 4 tablespoons low sodium soy sauce
  • 3 tablespoons sesame oil
  • 2/3 cup scallions chopped

  1. In a heated wok or skillet, add canola oil. Saute pork cubes for about seven minutes until golden brown. Remove and set aside.
  2. Add onion, garlic, corn and peas and carrots. Saute until onion is transparent over medium heat. About 3 minutes.
  3. Add rice and cook for an additional 2 minutes.
  4. Make a well in the center of the rice and add the eggs. Stir constantly until eggs are thorough scrambled and in small pieces.
  5. Add pork back into the fried rice.
  6. Add soy sauce and sesame oil. Stir to incorporate. Cook over medium heat five minutes more.
  7. Garnish with chopped scallions before serving.
