Ingredients
3medium zucchini
1/2lb.ground beef
1/2cupfinely diced red peppers
1/2cupfinely diced red onion
1jalapenofinely diced
1cupsalsa
2clovesgarlicminced
1teaspoonground cumin
1teaspoonchili powder
Garlic Powderto taste
Salt & Pepperto taste
1cupbrown ricecooked
2cupscheddar cheese
3tablespoonscanola oil
Non-stick cooking spray
Instructions
Pre-heat oven to 400 degrees.
Cut zucchini in half lengthwise and scoop out center.
Spray an oblong baking dish with non-stick cooking spray. Line up zucchini and season with salt, pepper and garlic powder. Set aside.
Heat a 12" saute pan on medium high. Add canola oil to the pan. Add ground beef. Break apart and stir often. Add seasonings, peppers, onion, garlic and salsa. Continue to cook until meat is cooked through.
Remove from heat. Add rice and 1/2 cup of cheese and mix.
Fill the center of each zucchini boat with ground meat mixture. Top with remaining cheddar cheese.
Bake for 25 - 30 minutes until golden brown and cheese is melted.
