Ingredients

  • 2 cups frozen corn or 4 ears of fresh whole corn roasted on grill
  • 2/3 cup black beans drained
  • 1/2 cup red onion diced
  • 2 tablespoons jalapeno finely chopped
  • 1/2 cup red pepper diced
  • 3 tablespoons fresh cilantro finely chopped
  • Juice of one lime
  • 1 tablespoon of oil
  • 2 cloves garlic minced
  • 1 teaspoon salt

Instructions

  1. To roast frozen corn, heat oven to 450 degrees. Spread corn on a sheet pan and roast in oven for 10 minutes. To roast whole fresh corn, place cleaned corn on a medium-heat grill for 5 minutes, turning so each side is slighted charred. Once finish grilling, cut corn off the cob and place in a medium bowl.
  2. Add corn to a medium bowl. Add beans, peppers, onion, garlic, cilantro, lime juice, oil and salt.
  3. Toss together and serve with tortilla chips.
