Preheat oven to 350 degrees.

Sift dry ingredients and set aside.

In a mixing bowl, beat oil and eggs until light yellow. Add brown sugar and beat until well incorporated.

Mix in pumpkin puree and vanilla.

Gradually add dry ingredients on low speed. Do not over mix. Beat only until incorporated.

Use an ice cream scoop to drop on a lined sheet pan. You should have 16 "pies" which will make 8 Whoopie Pies once assembled

Bake at 350 degrees for 15 - 18 minutes. Whoopie pies should be soft and spongy to the touch.

Remove from oven and cool completely.

Cream Cheese Filling

In a medium bowl, mix cream cheese and butter until well incorporated. Add vanilla.

Gradually mix in powdered sugar and beat well.

To assemble pies, add a few tablespoons of filling to the flat (or bottom side) of one of the pies. Top with another pie.

Dust with powdered sugar before serving.
