Garden Fresh Gazpacho

Garden Fresh Gazpacho is a delicious summer soup made with fresh garden vegetables. This recipe is super easy and a great way to use up all the vegetables from the farmer's market or your garden.

Ingredients

  • 1 ripe tomato diced
  • 1 can diced tomatoes with juice
  • 2 celery stalks chopped
  • 1 red pepper chopped
  • 1/2 cup red onion chopped
  • 1 small cucumber chopped
  • 1 small zucchini chopped
  • 1 clove garlic
  • 1 jalapeno chopped (to taste)
  • 1 avocado diced
  • 1/2 cup cilantro
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon cumin
  • Juice of one lime
  • 3/4 cup fresh corn
  • Sour Cream for garnish

Instructions

  1. In a food processor, add tomato, canned tomato. celery, red pepper, onion, cucumber, zucchini, garlic, jalapeno (to taste - if you like heat, then add more), cilantro, salt, pepper and cumin.
  2. Pulse the food processor so the gazpacho is chunky but all the vegetables are combined.
  3. Transfer to a food storage container and refrigerate at least two hours.
  4. To serve, garnish with fresh corn, avocado and a dollop of sour cream.
