Garden Fresh Gazpacho is a delicious summer soup made with fresh garden vegetables. This recipe is super easy and a great way to use up all the vegetables from the farmer's market or your garden.

Ingredients
1ripe tomatodiced
1can diced tomatoes with juice
2celery stalkschopped
1red pepperchopped
1/2cupred onionchopped
1small cucumberchopped
1small zucchinichopped
1clovegarlic
1jalapenochopped (to taste)
1avocadodiced
1/2cupcilantro
1teaspoonsalt
1teaspoonpepper
1/2teaspooncumin
Juice of one lime
3/4cupfresh corn
Sour Creamfor garnish
Instructions
In a food processor, add tomato, canned tomato. celery, red pepper, onion, cucumber, zucchini, garlic, jalapeno (to taste - if you like heat, then add more), cilantro, salt, pepper and cumin.
Pulse the food processor so the gazpacho is chunky but all the vegetables are combined.
Transfer to a food storage container and refrigerate at least two hours.
To serve, garnish with fresh corn, avocado and a dollop of sour cream.
