Ingredients
4chicken breasts
1bottle lemon marinade
1cupchopped California Black Ripe Olives
2cupschopped tomatoes
1/2cupchopped red onion
1cupcrumbled feta cheese
1clovegarlicminced
2tablespoonsfresh basil
1tablespoonfresh oregano
Salt and Pepperto taste
3tablespoonsred wine vinegar
2tablespoonsolive oil
Instructions
Marinate chicken breasts in lemon marinade for one hour.
To make Mediterranean Salsa, combine chopped California Black Ripe Olives, chopped tomatoes, crumbled feta cheese, onion and garlic in a medium bowl. Add fresh herbs and salt and pepper to taste.
Drizzle red wine vinegar and olive oil over salsa and gently toss.
Grill chicken over medium heat.
When chicken is done, plate and top each piece of chicken with a generous portion of Mediterranean Salsa.
