Baked Sweet Potato Fritters

Baked Sweet Potato Fritters are a delicious and healthy alternative to a traditional deep fried fritter. Perfect for a side dish or party appetizer.

Ingredients

  • 2 large sweet potatoes or yams about 1 lb.
  • 2/3 cup Parmesan cheese grated
  • 1/2 cup scallions thinly sliced
  • 1/2 cup eggs about 2 eggs, beaten or egg substitute
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • Non-Stick Cooking Spray

Instructions

  1. Pre-heat oven to 425 degrees
  2. Wash and peel sweet potatoes. Using box grater or food processor, grate into medium bowl
  3. When finished grating potatoes, add beaten eggs, cheese, scallions, cayenne and salt and mix with spatula.
  4. Line a large baking sheet with parchment paper. Using an ice cream scoop, scoop out sweet potato fritter mixture and place evenly on baking sheet.Spray the top of each fritter with non-stick cooking spray to help them brown in the oven.
  5. Bake for 20-25 minutes until crisp and golden.
  6. Serve with Smokey Garlic Dipping Sauce.
