These Bakery Style Soft Pumpkin Cookies are soft and mildly sweet with just the right amount of pumpkin spice.

Ingredients

– butter –  sugar – baking powder – baking soda – salt – cinnamon – pumpkin pie spice Swipe up for full list of ingredients

In a large bowl,, beat the butter with an electric mixer until light and fluffy. Add the sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice; beat until combined.

Add the egg, vanilla extract, and pumpkin puree; beat until combined. Add the flour and mix just until combined.

Step 3

Scoop the cookie dough onto an ungreased baking sheet to form 18 cookies. Bake at 350 for 11-12 minutes.

Step 4

Frost the completely cooled cookies generously with the cream cheese frosting. You can use a pastry bag if you have one, or just use an offset spatula.
