Heat cast iron skillet with oil to 375 degrees.

In a mixing bowl, combine dry ingredients. Whisk together. Make a well in the center and set aside.

In a small bowl beat milk, eggs and vanilla together.

Pour wet ingredients into the center of the dry ingredients. Mix together by hand. Add chopped apples and mix well.

Drop batter by tablespoons into the hot oil. Fry three minutes on each side or until golden brown.

Remove from skillet and set on a baking rack to cool.

To make cinnamon glaze, combine confectioners sugar and cinnamon. Add vanilla and milk. Stir until smooth. May need to add a little more milk if glaze is too thick.

Drizzle glaze over each apple fritter. Allow to dry.
