Slow Cooker Pulled Pork Sandwiches

Ingredients

  • 5 lbs. boneless pork shoulder
  • 2 large onions thinly sliced
  • 1 28 ounce can crushed tomatoes
  • 3 cloves crushed garlic
  • 2 tablespoons smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cayenne pepper
  • 1 1/2 tablespoons cumin
  • 1 cup apple cider vinegar
  • 1 cup light brown sugar
  • 2 tablespoons salt

Instructions

  1. Thinly slice onions.
  2. Add to the slow cooker along with the crushed tomatoes, seasonings, vinegar and brown sugar. Mix well.
  3. Trim pork and add to slow cooker. Turn once so all sides of the pork is coated with liquid.
  4. Turn slow cooker on low, cover and cook for eight hours. Turn once about halfway through the cooking process.
  5. After 8 hours, remove pork from slow cooker and place on a cutting board. Cool slightly. With two forks, shred pork apart.
  6. Skim any fat off the top of the liquid. Place shredded pork back in the slow cooker. Keep warm.
  7. Serve on a hearty roll.
