Red Velvet Cake Mix Cookies

Share some love this Valentine's Day with these 4-ingredient Red Velvet Cake Mix Cookies. This cookie recipe is so chewy and delicious.

Ingredients

  • 1 box 16.5 box red velvet cake mix
  • 1/3 cup canola oil
  • 2 large eggs
  • 1 cup nestle white chocolate chips
  • 2 cups pink and red sugar sprinkles

Instructions

  1. Preheat oven to 350 and line two large cookie sheets with parchment paper and set aside.
  2. Using a standing mixer, beat together the cake mix, oil, and eggs until fully combined.
  3. Place dough into the refrigerator to harden for 30 minutes.

  4. Remove from fridge after the 30 minutes is up and scoop two tablespoon sized balls of cookie dough into your hand and roll into a ball
  5. Add sprinkles into a bowl and roll dough ball into the sprinkles
  6. Place onto the cookie sheet and repeat steps for 12 more cookies.

  7. Place cookie sheet into the oven and bake for 8 minutes. Remove from oven and place chocolate chips onto the top of the cookies.

  8. Place back into the oven for another 2 minutes then allow to cool completely on a wire rack. Repeat steps with remaining dough.
