Cheesy Chicken Broccoli Ranch Casserole is a comforting meal that will warm your up on a cold day. It's perfect to make for a quick weeknight dinner.

Ingredients

  • 2 cans cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 2 packets ranch dressing mix
  • Salt & Pepper to taste
  • 3 cups cooked chicken chopped into bite sized pieces
  • 3 cups broccoli florets fresh or frozen
  • 3 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion

  • Topping
  • 1/2 package of Wasa Multi Gran crackers about 2 cups
  • 1 cup shredded cheddar cheese
  • 1 teaspoon thyme optional
  • 1/3 cup melted butter

Instructions

  1. Preheat oven to 375 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Set aside.
  2. In a food processor, pulse Wasa crackers to make crumbs. You will need about 2 cups for the topping). Add to a medium bowl. Stir in cheddar cheese and melted butter. Set aside.
  3. In a large bowl add chicken, rice, broccoli and cheddar cheese.
  4. In a separate, mix soup mix, sour cream, chicken broth and ranch dressing together.
  5. Add soup mixture to chicken mixture. Gently stir to incorporate.
  6. Pour in the baking dish. Top with cracker topping.
  7. Bake for 30-35 minutes until golden brown and bubbly.
