Chicken Corn Chowder

Warm up on a cold day with a bowl of this hearty Chicken Corn Chowder.

This easy soup recipe is Loaded with chicken, corn, bacon, cheese, potatoes. This delicious chowder recipe is a winner!

INGREDIENTS

- boneless chicken breast cooked and shredded. - bacon cooked and crumbled - unsalted butter - red bell pepper diced - carrots finely diced - celery diced - sweet onion diced - garlic minced - jalapeno seeded and diced

In large pot, melt butter over medium heat. Add peppers, onion, garlic, carrots and celery. Saute for 3 minutes.

Stir in flour and stir constantly.

Whisk in chicken broth slowly. Continue to stir until well blended and flour is dissolved.

 Add potatoes, half of the bacon, salt, pepper, and parsley.

Bring to a low boil for 15 minutes until potatoes are tender.

Add cooked chicken, corn, and half and half. Cook for 15 minutes more.

This soup packs a nice punch when it comes to vegetables too. Luckily, I freeze a hefty amount of corn we grow to use in recipes like this one. You can also use fresh corn as well.
