If you would have told me 10 years ago that I would develop a love affair with coffee, I would have looked at you like you had three heads. Up until then, I drank nothing but hot tea. All through college, I drank hot tea. For my first few years of motherhood, I drank hot tea. But, somewhere over time, my tastes have changed and I now love a nice cup of hot coffee. The standing rule in this house is not to talk to “mom” until she has had her first cup of coffee in the morning.

Coffee very versatile too. One of the many ways I like to enjoy coffee is by making an affogato. An affogato is an Italian coffee float. This Salted Caramel Affogato is a perfect reason to celebrate because, not only am I obsessed with coffee, but I also love salted caramel and ice cream. It’s a win-win!

Salted Caramel Affogato

Making a Salted Caramel Affogato only involves 4 ingredients. I stopped at my local ShopRite and picked up a box of Folgers K-Cups, Truvia Natural Sweetener, Dunkin’ Donuts Caramel and some light salted caramel ice cream. Using Truvia Natural Sweetener and light ice cream takes some of the guilt away when enjoying this dessert.

Salted Caramel Affogato -

Begin by adding one scoop of light salted caramel ice cream to a mug. Add a few splashes of the Dunkin’ Donuts Caramel creamer to the mug. You can add more of less depending on your taste.

Salted Caramel AffogatoWhile a traditional affogato is made with a shot of espresso, I brewed a cup of strong Folgers in my Keurig for this recipe. Espresso is just a little too strong for me. Folgers K-Cups are my favorite. Pour the hot coffee over a scoop of the light salted caramel ice cream. For extra sweetness, add one packet of Truvia Natural Sweetener to the coffee before you pour it over the ice cream.

Top it off with a drizzle of salted caramel and some whipped cream. Super simple, right!!! It is the perfect dessert to sit and enjoy with your girlfriends. Warmer weather is just around the corner. This is the perfect spring and summer pick me up!

Ingredients
  • 4 ounces strong-brewed Folgers coffee 1 Folgers K-Cup pod
  • 2-3 ounces Dunkin Donuts Caramel Creamer
  • 1 scoop light salted caramel ice cream
  • 1 packet Truvia Natural Sweetener
  • Caramel topping for garnish
  • Whipped Cream for garnish
Instructions
  1. Brew one Folgers K-Cup on the 4 ounce strong setting of a Keurig Coffee Machine.
  2. Sweeten with 1/2 packet of Truvia Natural Sweetener
  3. Add one scoop of light salted caramel ice cream to a mug.
  4. Pour 2-3 ounces of the Dunkin Donuts Caramel creamer.
  5. Pour the strong Folgers coffee over the ingredients.
  6. Garnish with whipped cream and drizzled caramel sauce.
