‘Tis the season for all things eggnog. Eggnog is definitely a familiar face during the holiday season, spiked or not. As soon as you see eggnog in the diary aisle, you know the holiday season is definitely here. I like to incorporate eggnog into my holiday baking. It’s a fun twist for cookies and desserts.

Now let’s talk about cheesecake. I love it. End of story. And when I say I love it, I mean I LOVEEEEEE it. – all flavors, all shapes and all sizes. I often bake a cheesecake for my Christmas Eve dinner. This year, however, we are going to be enjoying these Mini Eggnog Cheesecakes.

I love that these Mini Eggnog Cheesecakes are perfectly portioned with a delicious holiday flair. You can make them in a muffin pan or a mini cheesecake pan. Either way, they are equally delicious. Here is how to make some this holiday season.

How To Make Eggnog Cheesecake

Preheat oven to 350°. In a food processor, blend cookies and melted butter, place at the bottom of each cup.

In a bowl, using whisk or a hand mixer, beat cream cheese and sugar until it gets a creamy texture. Add eggnog, vanilla extract, egg, nutmeg and cinnamon, keep whisking.

Ingredients

  • 10 chocolate biscuits (can also use gingersnaps for a spicy kick)
  • 2 tbsp butter, melted
  • 1 block cream cheese
  • 1/3 cup eggnog
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • Whipped cream
  • 1/4 Powdered sugar
  • M & Ms, for serving
  • Melted chocolate, for serving

Instructions

  1. Preheat oven to 350°. Line a muffin pan with cupcake liners.
  2. In a food processor, blend cookies and melted butter, place at the bottom of each cup.
  3. In a bowl, using a hand mixer, beat cream cheese and sugar until creamy texture. Add eggnog, vanilla extract, egg, nutmeg and cinnamon. Beat well.
  4. Divide butter between muffin cups, filling 3/4 full. Bake for 20 mins. Chill for 2-3 hours in the refrigerator.
  5. Whip the cream and powder sugar until stiff
  6. Top each cheesecake with whipped cream. Decorate the cheesecakes with a swirl of melted chocolate. Place M & Ms on top to look like a string of Christmas lights.
