Grilled Chicken With Mediterranean Salsa
I’m a big fan of simple dishes that are packed with a lot of flavor. Today, I am taking a trip across the ocean to share with you this delicious Grilled Chicken With Mediterranean Salsa. The key ingredient in this Mediterranean-inspired recipe is California Ripe Olives.
California Ripe Olives are an essential part of the Mediterranean Diet . Black olives contain monounsaturated fat – the good fat! Did you know a serving of olives contains 0 grams of trans fat and they are naturally a cholesterol-free food? Score! California Ripe Olives are one of the most versatile items in my pantry. I always make sure I have them on hand when I need them.
I don’t know about you, but I cringe at the thought of turning on my stove during the summer months. I love to take the cooking and the mess outside to my grill. Another summer bonus is the bounty of fresh fruits and vegetables available. I love having the produce we grow on our family’s 700 acre fruit and vegetable farm at my disposal.
For this Grilled Chicken With Mediterranean Salsa, I combined simple ingredients together like chicken and a black olive salsa to make an out of this world dish that is quick and easy too.
The Mediterranean Salsa is really the star of this dish. By pairing traditional Mediterranean ingredients, like ripe tomatoes (from our farm, of course), California Ripe Olives, feta cheese and onions together with some fresh herbs, I was able to turn an ordinary grilled chicken into an extraordinary dish.
To prepare this dish, I marinate the chicken for one hour in a lemon marinade that I purchased from the grocery store and then grilled. While the chicken is marinating, I prepared the Mediterranean Salsa by adding chopped black olives, tomatoes, onions, garlic and crumbled feta cheese to a bowl. Add some fresh herbs and drizzle the salsa with some red wine vinegar and olive oil. Toss to coat. Simple, right!!??
To serve, I topped the chicken with a nice portion of the Mediterranean salsa. Perfect! The black olives, tomatoes and feta cheese work so well together and the color is so vibrant too!
Another bonus – you can serve this salsa as an appetizer at a party or casual get together with some pita chips or toasted bread.
- 4 chicken breasts
- 1 bottle lemon marinade
- 1 cup chopped California Black Ripe Olives
- 2 cups chopped tomatoes
- 1/2 cup chopped red onion
- 1 cup crumbled feta cheese
- 1 clove garlic minced
- 2 tablespoons fresh basil
- 1 tablespoon fresh oregano
- Salt and Pepper to taste
- 3 tablespoons red wine vinegar
- 2 tablespoons olive oil
- Marinate chicken breasts in lemon marinade for one hour.
- To make Mediterranean Salsa, combine chopped California Black Ripe Olives, chopped tomatoes, crumbled feta cheese, onion and garlic in a medium bowl. Add fresh herbs and salt and pepper to taste.
- Drizzle red wine vinegar and olive oil over salsa and gently toss.
- Grill chicken over medium heat.
- When chicken is done, plate and top each piece of chicken with a generous portion of Mediterranean Salsa.
