Back to school time not only means that the kids have to get back in a routine, but the parents do as well. This includes packing the lunches for the kids each day. I admit, often my lunch packing creativity falls a little flat. You know, same old boring sandwich paired with a piece of fruit and a snack of some sort. French toast is one of my favorite breakfasts. So why not make it into a fun sandwich that you can pack for lunch? Take two slices of good bread (I like to use challah). Spread Simply Jif® Peanut Butter on one slice and Smucker’s® Strawberry Preserves on the other slice. Assemble and set aside.

Dip the sandwich in a mixture of eggs, vanilla, cinnamon, and sugar. Place on a hot, greased griddle. Cook on each side until brown.

These Stuffed Peanut Butter And Jelly French Toast Sandwiches are a fun twist on the classic lunchbox favorite!

Servings: 2 sandwiches

Ingredients
  • 2 heaping tablespoons Smucker’s® Strawberry Preserves
  • 2 heaping tablespoons Simply Jif® Peanut Butter 
  • 4 slices challah bread or any bread you choose
  • 2 eggs
  • 1/4 cup milk
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon of sugar
  • Coconut oil
  • 2 tablespoons butter
Instructions
  1. Slice four pieces of challah bread. Spread peanut butter on one half and preserves on the other. Assemble and set aside.
  2. In a small bowl add eggs, milk, cinnamon, vanilla and sugar. Beat together.
  3. Heat a griddle over medium heat. Add 1 tablespoon coconut oil and the butter. Melt. Dip peanut butter and jelly sandwich in the egg mixture, turning to coat both sides.
  4. Place each sandwich on griddle and cook 4 minutes on each side or until golden brown.
