Ever since my love for coffee developed many years ago, I have been a fan of flavored creamer. I use it every day. However, have you ever looked at some of the ingredients on the various packaging? I can’t even pronounce half of the words. That is until I purchased a container of International Delight Simply Pure Coffee Creamer. Simply Pure is made with five ingredients including REAL milk, cream and sugar, all words that I can easily pronounce. It’s the perfect way to flavor my coffee each morning. and is available in three flavors – Vanilla, Caramel, and Hazelnut.
Simply Pure is more than just creamer, though. I love to use it in recipes like this Strawberry French Toast Casserole. French toast is one of my favorite breakfast choices. I find it very comforting. While it is very easy to make, I don’t often have time during a busy weekday morning. This Strawberry French Toast Casserole is the perfect solution for busy mornings because it is prepared the night before and is ready to bake first thing in the morning.
A perfect French Toast recipe starts with good bread and wholesome ingredients. I decided to lighten this recipe up just a little by using an egg substitute instead of whole eggs. It tasted just as delicious. I added some Simply Pure Vanilla, along with some almond milk, to the egg mixture to give it a rich flavor. I can’t forget about the fresh strawberries in this recipe either. So sweet. I can’t wait to make this when the fresh berries we grow on our farm are ready.
As I mentioned before, this recipe is prepped the night before. Let it sit in the refrigerator overnight and pop it in a heated oven in the morning. I like my baked french toast moist but with a semi-crispy top. I baked it part of the time with foil and the remaining time without.
I purchased Simply Pure at Wal Mart. It can be found in dairy aisle. While I was there, I also grabbed the other ingredients I needed to make this delicious Strawberry French Toast Casserole recipe.
I love finding perfect ways to start the day. It’s a standing rule in this house not to speak to mom until she has had her first cup of coffee. - 1 loaf of whole wheat bread of challah bread sliced and cubed
- 2 cup fresh strawberries sliced
- 2 cups egg substitute or 8 large eggs
- 1/2 cup Simply Pure
- 1 cup almond milk
- 1/3 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 tablespoon pure vanilla extract
- Spray a 13 x 9 baking dish with non-stick cooking spray.
- Layer bread cubes with the sliced strawberries.
- In a mixing bowl, whisk egg substitute, almond milk, Simply Pure, sugar, cinnamon, salt and vanilla together.
- Pour over bread and strawberries. Cover and refrigerate for 4 hours or overnight.
- When ready to bake, preheat oven to 350 degrees. Cover and bake for 45 minutes. After 25 minutes, remove foil so top gets slightly crispy.
