My friends find it funny that this girl from New Jersey loves to watch auto racing. While I would never want to drive one of those cars myself, there is just something so exciting about auto racing. The rubbing, the drafting, the RACE itself – it’s all very intriguing. When my husband and I have time to sit down and watch a race, we like to snack. These Spicy Southwestern Chicken Skillet Nachos are a perfect way to rev up our race day taste buds.

Nexium 24HROver the years, I have developed a taste for spicier foods. While I can tolerate a little more heat now when it comes to certain foods, what I don’t like is the potential for heartburn that they may cause. Nexium 24HR is here to help. It is the new #1 selling frequent heartburn brand*.  Nexium 24HR provides all day, all night frequent heartburn protection. Use as directed for 14 days to treat frequent heartburn. Do not take for more than 14 days or more often than every 4 months unless directed by a doctor. This product is not for immediate relief.

Now let’s talk racing. Ty Dillion, who drives the ’33’ Nexium car, is one of the young up and coming race car drivers. Look for Ty Dillion at the Duck Commander 500 on April 9th. Ty will also be driving a car sponsored by Advil later in the year. Tune in for all the racing excitement! You can check out Ty Dillon’s Nexium car on page 59 of ROAR.

A cast iron skillet is my best friend! I love it’s versatility. To make these nachos, I first made a zesty corn and black bean salsa, which I top them off with. I layered tortilla chips, cheese and chicken in the skillet. I topped with another layer of chips, cheese, chicken and the salsa. I baked the nachos in the oven until the cheese was nice and melted. Remove from the oven and top with some chopped tomatoes, avocados and diced scallions.

  2. 5 stars
I tried making a low-carb version of this by using lettuce cups instead of tortilla and it turned out sublime. Thanks for sharing this recipe! Will definitely be making it again.
