As a child one of the highlights of the fall season was visiting a local orchard near our home with my mom to buy baking apples. My mom is a baker. Let me clarify, my mom is an AMAZING baker.  Apple season is pretty popular here in New Jersey. Long before I became the farmer’s wife, I would go with my mom to the self-serve area of Jersey Jerry’s Apple Orchards to buy bags of apples so my mom could bake. I can still vividly remember everything about that little self-serve store right down to the box where we would drop our money to pay. But what sticks out most in my mind is the delicious recipes that my mom creates like these Apple Spice Cupcakes.

I love to bake, but I consider myself a shortcut baker. Life as a busy mom means that I need to find quick solutions to getting meals and desserts done in a pinch. I get so excited each year when apples are in season on our farm. It’s the perfect opportunity to walk out my front door and pick a few apples off of our trees. These Apple Spice Cupcakes are loaded with the fresh apples I just picked. They also have plenty of cinnamon spice to add to the delicious fall flavors of this cupcake.

After I iced them with the vanilla PillsburyTM Filled Pastry Bag, I garnished the top with some cinnamon sugar and a slice of dried apple.

Ingredients
  • 2 1/4 cup all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 stick butter 8 tablespoons, softened
  • 2/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla
  • 2 large apples about 3 cups, peeled and chopped
  • Pillsbury™ Filled Pastry Bag” Filled Pastry Bag Vanilla 16 oz.
  • Dried Apple Slices - for garnish
  • Cinnamon Sugar - for garnish
Instructions
  1. Preheat oven to 350 degrees.
  2. Line 2 muffin pans with cupcake liners. Set aside
  3. In a medium bowl, sift dry ingredients. Set aside.
  4. Add the butter and sugars to the mixer and beat until fluffy. Add eggs, one at a time, beating well after each. Add vanilla.
  5. Turn mixer to low and gradually beat in sifted dry ingredients. Don't overbeat.
  6. Remove bowl and stir in chopped apples by hand.
  7. Fill muffin cups 2/3 full. Bake 25 minutes or until a toothpick comes out clean.
  8. Cool on a baking rack. 
  9. Use the Pillsbury™ Filled Pastry Bag” Filled Pastry Bag Vanilla 16 oz to pipe icing on the top of the cupcake. Here's how: 1- Push the frosting toward the star tip and twist the top of the pastry bag. 2- If not already removed, remove the plastic over from the star tip by tearing at the perforation. 3- Squeeze from the top of the pastry bag to frost your cupcake. 
  10. Sprinkle cinnamon sugar over top and garnish with a dried apple slice.
