- 1 tablespoon cornstarch
- 1 teaspoon baking soda
- 1 tablespoon adobo or Cajun seasonings
- 2 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1 tablespoon oregano
- 1 tablespoon Paprika
- 1 tablespoon Cayenne
- Vegetable oil for frying
- Wet ingredients
- 1 cup whole fat buttermilk
- 1 egg
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 1/2 stick unsalted butter
- 1/2 cup Buffalo sauce
- 1 tbsp vinegar
- Ranch Dressing
- 1 cup mayonnaise
- 3/4 cup buttermilk
- 1/4 cup sour cream
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 tablespoon finely chopped fresh parsley

Buffalo Chicken Tenders
- Whisk all dry ingredients together in a medium mixing bowl.
- Whisk egg, buttermilk, 1/2 tsp pepper and 1/2 tsp garlic in a separate bowl.
- Set up a wire rack to use as a drying station.
- Coat chicken in buttermilk mixture. Then dredge in flour. Repeat.
- Let chicken rest on wire rack for 10 mins. (Helps coating adhere to chicken and not fall off while frying.
- Heat vegetable oil.
- Fry in medium heat for 4-5 mins on each side until golden brown and crispy.
- Drain excess oil.

- Whisk all ingredients in a bowl.
