Pesto Chicken Stuffed Sweet Potatoes

Ingredients

  • 1 cup raw almond
  • 4-5 cloves of peeled garlic
  • 3 cups fresh basil leaves
  • 2 cups fresh spinach
  • 2/3 cup olive oil
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp nutritional yeast (optional)
  • 3/4 tsp sea salt
  • 3 cups cooked shredded chicken breast or about 1 lb uncooked
  • 6 medium sweet potatoes
  • Coconut oil for baking

Instructions

To Bake Potatoes:
1. Preheat your oven to 400 degrees.
2. Poke sweet potatoes with a fork and then coat with a bit of coconut oil all over.
3. Place on a parchment-lined baking sheet and bake 60-70 mins until soft.

For The Pesto:
1. Combine almonds, garlic, basil leaves, spinach, olive oil, lemon juice, nutritional yeast, and salt in a blender or food processor.
2. Blend on high speed until a paste forms, scraping sides as needed.
3. Combine cooked shredded chicken and pesto in a large bowl, mix well. 4. Season with salt if needed.
5. Once potatoes are ready, cut each one lengthwise and top generously with chicken pesto mixture. Serve warm!
