One of my favorite vegetables in the WHOLE WIDE World is cauliflower. Fall on our farm brings a lot of delicious homegrown vegetables including cauliflower. The heads we are harvesting right now are literally the size of a basketball. They are huge. Many of you have raved about my easy Breaded Cauliflower recipe, so I wanted to share another equally delicious recipe to make with this tasty vegetable.

- 1 medium head of cauliflower
- Flour

- Plain yogurt
- Garlic cloves, grated
- Fresh Dill
- Salt to taste

Make the Yogurt Dill Sauce
Start by mixing up the sauce so the flavors have time to blend. In a medium bowl, stir together the yogurt, grated garlic, chopped fresh dill, and a pinch of salt. Give it a good mix, then pop it in the fridge while you prep and cook the cauliflower.
Parboil the Cauliflower
Bring a large pot of water to a boil. Break up your cauliflower head into small florets, Add your cauliflower pieces and cook for just a few minutes until slightly tender—about 2–3 minutes. You want them to have a bit of bite left, not mushy. Drain and let them cool slightly. Be careful not to overcook the cauliflower
Set Up Your Breading Station
Get three shallow bowls ready:
- In the first bowl, mix the flour with garlic powder, smoked paprika, black pepper, and salt.
- In the second bowl, beat the eggs until frothy.
- In the third bowl, add the cornmeal.

- 1/2 cup all-purpose flour
- 1 cup cornmeal
- 3 eggs
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- For the sauce:
- 2 cups plain yogurt
- 2 garlic cloves grated
- 1 small bunch of fresh dill chopped
- Salt to taste
Notes
- In a medium bowl, combine yogurt, dill, garlic, and salt to taste. Mix well and refrigerate while you prepare the cauliflower bites.
