Breakfast is the one meal of the day that I am never prepared for. I try; I really do. But my breakfast execution, especially during the week, often falls flat. It’s all about preparation, which I am terrible at. But with a little planning, these Tasty Loaded Breakfast Burritos are the perfect make-ahead breakfast.

This protein-rich breakfast idea is filled with hearty ingredients like eggs and potatoes and then wrapped in the new Mission® Protein Tortilla Wraps. Tortilla wraps make food fun. These tortillas offer a great extra boost of protein, are high in fiber, low in carbs, and taste great too. Since they are plant-based, they are a great option for vegetarians. And these Loaded Breakfast Burritos aren’t just for breakfast. They are a delicious quick meal idea that your family can enjoy at any time of day. I like to make a batch of these burritos and freeze them for a quick morning meal.

Here is how to make these Tasty Loaded Breakfast Burritos.

Step 1

Tasty Loaded Breakfast Burritos

In a heated skillet, add two tablespoons of oil. Add frozen hash brown potatoes and sauté on medium-high heat until golden brown. Remove from skillet and set aside.

Step 2

In the same skillet or a grill pan, toast each side of the Mission® Protein Tortilla Wraps for one minute on each side. I like the way the toast marks look. Set aside until ready to fill.

Step 3

Heat oil in a medium skillet. Add diced ham, onions and peppers. Cook 3-5 minutes until onions are transparent.

Step 4

Add eggs, milk, salt and pepper to a bowl. Whisk together. Pour egg mixture into a skillet with the ham and vegetables. Cook until thickened and no visible liquid egg remains, about 3 minutes; set aside.

Step 5

Loaded Breakfast Burritos

Spread eggs down centers of tortillas; top with hash browns, ham, eggs, and cheese. Fold in opposite sides of each tortilla, then roll up, burrito-style. Place, seam-sides down, onto a prepared baking sheet. Bake in a 400-degree oven for 12-15 minutes.

I love the versatility of this recipe. You can certainly substitute different vegetables and meat (ahem…bacon is delicious in this recipe too) depending on your family’s preferences.

Ingredients

  • 6 large eggs
  • 1 cup diced ham
  • 2 cups frozen hash brown potatoes
  • 1 cup red pepper, diced
  • ½ cup sweet onion, diced
  • ½ cup whole milk or half and half
  • 1 cup cheddar cheese
  • 1 package Mission® Protein Tortilla Wraps

Instructions

  1. In a heated skillet, add two tablespoons of oil. Add frozen hash brown potatoes and sautéon medium high heat until golden brown. Remove from skillet and set aside.
  2. Preheat oven to 400 degrees.
  3. In the same skillet or a grill pan, toast each side of the Protein Tortillas for one minute on each side. I like the way the toast marks look. Set aside until ready to fill.
