Caprese Tortellini Salad
Yield 4 Servings
Turn pizza night into party night with this delicious Caprese Tortellini Salad. This recipe is the perfect quick side dish for a weeknight dinner or party.
- 16-ounce package fresh or frozen cheese tortellini, cooked according to package directions
- 1 cup cherry tomatoes, halved
- 1 cup ciligenie (fresh mozzarella balls), halved
- 1/2 cup chopped red onion
- 1/2 cup fresh basil, chopped
- salt and pepper to taste
- 1/4 cup balsamic vinegar
- 1/3 cup olive oil
- 1/2 teaspoon garlic powder
Cook tortellini according to package directions. Drain and let cool.
Whisk dressing ingredients together and set aside.
In a medium bowl, add tortellini, tomatoes, fresh mozzarella, basil, and onion. Season with salt and pepper. Pour dressing over and gently toss.
