Several years ago, I was at a gathering when I first tasted potato casserole. However, having my own family, I wanted to create my own Easy Potato Casserole. After some time, I was able to put together the most perfect recipe and I can’t wait to share it with you all.
While the Easy Potato Casserole has such great flavor, it is also one of the easiest casseroles that I have ever prepared. It requires a few minutes of preparation that involves mixing ingredients, such as the cream of chicken soup and cheese.

However, once the prep takes place, cooking the casserole is so simple. I add everything to the glass baking dish and leave it in the oven for about 45 minutes. It takes about one hour between preparing the ingredients and baking the casserole in the oven.
Substitutions For Some Ingredients in the Easy Potato Casserole
The recipe calls for cream of chicken soup, which I thoroughly enjoy, but I know not everyone is a huge fan of canned things.
- For those who do not want to use canned cream of chicken soup, it is possible to replace it with homemade cream of chicken soup concentrate.
- Sour cream is an essential ingredient in this recipe.
- While some people use Greek yogurt as an alternative for sour cream in some recipes, I do not recommend it for this specific one. Instead, I would suggest choosing an organic sour cream option as a replacement for traditional sour cream if need be.
- Anyone who wants to use more natural ingredients can swap out the ingredients for organic versions, such as organic shredded cheese and organic butter.
- Also, it does not matter if you use the name brand corn flakes or not. You can purchase the generic version and still get great results when making this Easy Potato Casserole.

Easy Potato Casserole Serving and Storage Tips
The recipe provides enough food for 12 servings, which may be more than what you need to serve your family. You can store any leftovers of your Easy Potato Casserole in a food storage container in the fridge. When reheating, place the casserole in a microwave-safe bowl and heat it for about a minute in your microwave.

- 1/3 cup butter, melted
- 2 cups sour cream
- 1 can cream of chicken soup
- 1 teaspoon salt
- 1 teaspoon onion powder
- 2 cups shredded cheddar cheese
- 24 ounces frozen diced hash browns (cubes, not shreds), thawed
- Topping:
- ½ cup butter (1 stick), melted
- 3 cups corn flakes, slightly crushed
Instructions
1. Preheat the oven to 350F degrees.
2. In a large mixing bowl, combine the 1/3 cup of melted butter, sour cream, cream of chicken soup, salt, and onion powder. Stir in the shredded cheddar cheese and thawed diced hash browns.
3. Pour the mixture into a 9×13 inch glass baking dish greased with non-stick cooking spray.
4. In a medium mixing bowl, combine the ½ cup of melted butter and crushed corn flakes. Stir until the corn flakes are coated in the butter. Spoon the corn flake mixture over the
casserole.
5. Bake the casserole uncovered for 45 minutes until it is bubbly and golden brown around the edges. Cool for 5-10 minutes before serving.
